Bon Appetit's Andrew Knowlton works a 24-hour shift at Waffle House. The first Waffle House diner opened in Atlanta, Georgia in 1955. Today, the chain restaurant has more than 1,700 locations in 25 states, mostly in the South. Waffle House is known for being open 24 hours a day, 365 days a year. Knowlton's full day on the job starts a little before 7 AM. All Waffle House employees must be either clean-shaven or wear a beard guard, so Knowlton decides to shave the beard. Once Knowlton has his uniform, his on-the-job training an orientation begins. He gets to work making bacon, eggs, waffles, Texas toast, and hash browns. During his down time, Knowlton sits down with Waffle House co-founder, Tom Forkner to learn more about the eatery's history. One of the daily tasks at Waffle House for employees is mixing waffle batter using a power drill attached to a whisk. From there, Knowlton powers through the lunch shift into the evening hour dinner rush and well into late night. As early morning approaches again, Knowlton has lost all track of time but has gained appreciation and admiration for all Waffle House employees. Once soft, mash the cassava, mixing in crushed peanuts until the texture is similar to mashed potatoes. 🍈BREADFRUIT: Boil the breadfruit until soft, then add a bit of salt and mash. 🦐SHRIMP: Sauté shrimp with onion and tomato. Add cassava leaves on top and allow it to boil in water to create a shrimp soup. 🐟TUNA: Cut the tuna into sections and put it in a hot steel pot. We took a ride on the world-famous Goodyear Blimp as it flew above the Daytona International Speedway where it provided aerial coverage for NASCAR in February. Our journey began at the Blimp Base in Pompano Beach, Florida — from there, the Blimp flew 200 miles north to a small airport in New Smyrna, where it would call home for the weekend.  We got to spend about five hours in the Blimp, which was updated in 2014 in collaboration with the Zeppelin company. The new model isn't technically a Blimp, due to the internal structure inside its balloon, or envelope. This is the sprawling complex of Angkor Archaeological Park. The site is located in the northwestern region of the country and is only four miles from the city of Siem Reap. The Khmer Empire’s various capitals thrived here from the 9th to 15th centuries, over an empire that stretched from Myanmar to Vietnam. Including forested areas and newly discovered “suburbs” Angkor covers more than 400 square miles—an area considerably larger than New York City’s five boroughs. The massive Angkor Wat is the most famed of all Cambodia’s temples—it even appears on the nation’s flag. The 12th century “temple-mountain” was built as a spiritual home for the Hindu god Vishnu. The temples of Angkor are architectural masterpieces laden with artistic treasures like the bas-relief galleries that tell enduring tales of Cambodian history and legend. Angkor is as much about water as it is about stone—the site boasts an enormous system of artificial canals, dikes, and reservoirs. The West Baray reservoir is the largest of which at 5 miles long and 1.5 miles wide. These massive works skillfully harnessed river and rainwater to quench the thirst of some 750,000 residents in the world’s largest preindustrial city. That water also irrigated wealth-producing crops like rice, which served the Khmer as currency. It’s still a mystery to scientists why the city’s rulers abandoned the site and resettled near the modern capital of Phenom Penh. Some scholars speculate that the downfall of this elaborate water system led to the end of Angkor. The town of Siem Reap is the gateway to Angkor and is filled with lodging, dining, and tour-package options for all budgets. Those preferring to travel by boat can also make the trip from Phnom Penh in some five or six hours—about the same travel time as by road. The airport in Siem Reap has service to Phnom Penh and regular flights abroad to Thailand, Singapore, Vietnam, and Laos. You might not remember it, but at one point Hooters had an airline. Hooters Air launched in 2003, but closed about three years later. The company cited a number of reasons for the airline's failure, including a $40 million loss. But in the short time that Hooters Air existed, it made a major economic impact on one city in particular — Myrtle Beach, South Carolina — that's where the airline was headquartered, and where it brought thousands of tourists every week. We talked to people who worked for Hooters Air — flight attendants and one pilot (who asked to remain anonymous). They told us what it was really like to work for the airline (which featured two Hooters Girls on every flight) and dispelled some common misperceptions about what it was like to fly it. This snack is frequently accompanied by local rum. 🇲🇬KOBA: Lay out banana leaf spines with banana leaves on top. Add a layer of rice flour to prevent the koba mixture from sticking to the banana leaves. Then add the koba mixture, a combination of crushed raw peanuts and sugar. Wrap it all up in the banana leaves and allow it to cook in a bit of water for 3 days. Koba is beloved across Madagascar, primarily sold on the street or to people in their cars as they drive through a city. Koi fish are colorful patterned common carp that are now celebrated in annual koi shows and kept in ponds all over the world. Some are worth millions. ------------------------------------------------------ #Koi #Fish #BusinessInsider Following is a transcript of the video: Anything strike you as special about this fish here? Well, it's worth 1.8 million dollars. It won grand champion at the All Japan Koi Show in 2017, and is the most expensive koi fish ever sold. Koi may just look like an oversized goldfish, but they're not even remotely related. Koi are actually a type of carp, and today they're some of the most expensive pet fish in the world. But why? Koi were originally raised in Japan in the 1700s when rice farmers first began breeding them for their distinct colors and patterns, similar to how we breed dogs for their specific traits. And just like prized dog breeds, Japanese people take koi breeding very seriously. There are regular competitions to name the top koi. Judges and buyers pay attention to how healthy its skin looks, its size and body shape, and how gracefully the fish moves in the water. But the most important trait of all is the koi's coloring. The best koi have a good balance of colors and patterns according to their variety. For example, there are koi with light blue spots, ones with large red patches on their backs, or all-metallic gold. But the most winning fish often just boil down to these three varieties. They're often the most valuable. They dominate the shows, winning nearly every major category each year. And the better-looking the fish, the more a buyer is willing to pay. Yvo: Yeah, it depends. You can buy some small and cheap koi fish for a couple of bucks, but also, yeah, it can get up really, really high to thousands, ten thousands of dollars. Narrator: That's Yvo de Wal. He's a koi hobbyist and seller in the Netherlands, and he heads up the YouTube channel Koi Partner. Each year he visits Japan to shop for koi. Yvo: The breeders are located there, and they have experience with their bloodlines for many, many generations. Narrator: You see, bloodlines are just as prized in koi as they are in dogs because some of these koi are the result of decades of selective breeding. I mean, just take a look at the koi's wild relative, the common carp. Its dark colors would be considered unattractive for a koi, but it's perfect protection against predators in the wild. So how do you get from this to this? Well, it's actually similar to how we got from this to this, except koi breeders mainly select for size and color and ignore... Fluffiness. Koi have six types of color cells in their skin. Their cells can be red, yellow, black, white, blue, or metallic. Now in order to get a beautiful, reddish-orange pattern like the one on this 1.8 million dollar fish, you need to select for fish that have a white body and lots of red cells that concentrate in large patches. Red and white are important colors in Japanese culture, representing joy and purity. But having the right colors is only part of it. A koi's color cells sit at different depths in the skin, some right near the surface and some deeper in, which ultimately determines how bright the fish appears. The brighter the fish, the bigger the price tag. Today there are about 120 varieties. To compare, there are about 200 breeds of dogs. But when it comes down to it, breeding koi is a lot harder. A single koi can give birth to hundreds of thousands of baby fish at a time. Yvo: I think we are talking about millions and millions of fish per breeder. Narrator: So breeders must choose wisely. One breeder, for example, reports that he starts with 3 million fish and selects 15,000 to raise over the first year. From that he chooses 1,000 to continue to raise the second year. Yvo: Yeah, it's a really hard job for the breeders. Narrator: But in the end, all that hard work is worth it. The breeder of this grand champion waited until she was nine years old to sell her at auction. We Tried Pie, Mash, and Jellied Eels At One Of London's Oldest 'Fast Food' Restaurants

F. Cooke is one of the oldest fast food restaurants in London. They've been serving handmade pies and mash with traditional jellied eels since 1862, and not much has changed since then. "This is the oldest traditional meal in the East End of London. This is it," owner Joe Cooke told Business Insider. "It hasn’t altered, and as far as I’m concerned it won’t alter." Their pies are made using a divider machine splits that the dough into 36 perfect pieces. Each piece is then rolled and filled with mincemeat mixed with salt, pepper, and caramel. On a busy day they can make up to 600 pies. Pies are served with potato mash and a sauce called liquor made from parsley and the juice of cooked eels. "It was my great-grandfather who put the eel sauce, the parsley sauce which is predominantly a fish sauce with the meat pie," said Cooke. "Thank God it worked. That was it." F. Cooke has stayed at traditional as possible. They still sprinkle sawdust on the floor. As per pie etiquette, knives here are banned, and pies are to be eaten with fork and spoon only. The same can be said for gravy. "You mention the G word and you’re gone. It does not come with gravy. It might do up north or wherever it is, but here the traditional meal is pie and mash and parsley sauce liquor. We visited Phillips Academy in Andover, Massachusetts to see what makes it the best high school in America. The school is often confused with Phillips Exeter. There are 1,154 students on Andover's campus. Tuition for students living on campus is $53,900. Tuition for day students is $41,900. Andover has a "need-blind" admissions policy which means they accept students based on merit, not wealth. There are 44 states and 44 countries represented in the current student body. Following is a transcript of the video. Jenny Elliott: Folks who are not so close to Andover or who haven’t experienced something like this will say, “you were sent to boarding school.” And, a sense of agency for kids to feel like, “I wasn’t sent anywhere. I wasn’t sent by my parents. I chose to go to boarding school.” David Tsai: I’m a senior from Natick, Massachusetts. I have attended Andover for four years. And it is a distinct pleasure of mine to bring all of you around on what I believe is the best school in the world. The most important thing you learn on this campus is how every single faculty member and every single student, when they are walking on, these are called the paths, they’re smiling. They’re clearly enjoying themselves at this school. I believe that the boarding experience is so much more beneficial to the student because they get to live on their own and they get to experience high school as most people experience their college years. John Palfrey: What we’re trying to accomplish here is to be absolutely excellent in the classic ways of academics, of sports, of arts, of community engagement — all of those things — while also really focusing on the young person in their wholeness and to make sure that we encourage kids to have wellness as central to their experience. To make sure they’re getting sleep, to make sure that they’re eating well, to make sure they’re exercising. All of those things I think go together with this idea of excellence. And I think that that combination of things is working really well right now. Elliott: We don’t post grade point averages. We try to take some very specific steps not to elevate competition in those ways. We do a lot of collaborative work in classes, we do a lot of collaborative work on teams, we do a lot of collaborative work outside — and we do, in terms of our leadership positions for students, there are many positions where there’s actually co-presidents or there are co-leaders to send a clear message to our kids — collaboration is a skill that you’re going to need to develop well in order to be able to move forward here with success. Tsai: Mental health here is one of the most important things on campus because the only way for you to show your affection for someone, to love someone else, to build connections and build bonds, is to firstly love yourself. Palfrey: The most distinctive thing about Andover’s program is the need-blind admissions policy in our 11th year. How can you have a morally responsible high school with a $1 billion endowment? It’s when you actually do admit kids solely on the basis of their admission criteria that have nothing to do with wealth.
